Let’s get the big question out of the way: What is Anaerobic process?
It is an extended washed process for an additional 48 hours in closed tanks closed off from oxygen. Water is replaced every 6 hours and results in exceptionally cleaned coffees.

The Don Eli Estate is operated by Carlos Montero alongside his family. Jacob, his son does most of the processing and is an inspiring young upcoming professional in the coffee world. This coffee was his project and baby. He has come to know his family’s coffee products in and out and carries his position with pride.

We’ve always been impressed by Don Eli’s coffees, and this year is no exception. When visiting earlier in 2018, we saw a new crop of organic Typica, and a few experimental Geisha plants growing up the mountain and we are excited to see what the future holds for their exploratory coffee program. A huge thank you to the Montero family for housing us in Costa Rica on our visit. The experience was unparalleled and we can’t wait to return.
